I am told that there are 350 types of French Cheese. I am going to see if I can find them all. Regrettably, this one can't be # 1 as the farmer didn't let it age for 3 months...everyone was anxious to get it so it's too young.

cow cheese, mild, Vesubie is a local river...a tomme is the shape.
Here is an interesting suggestion...
When you eat roquefort cheese ( my favorite here....should be made from goat's milk ( called Brebis)...you put butter on the bread first and then the roquefort. S. thought I was crazy that I didn't know that.
I siad to him...you know, it's like how I prefer peanut butter, with butter...on a NYC salt bagel! excellent...he frowns as he hates peanut butter and does not understand bagels.
