Poulet in France

Here's the deal....I had stopped eating chicken for about 3 years. I recently started eating it again as most of the chicken here is "liberte" or free range.
You can get ;
boneless breasts...that they will pound flat for you if you get it from the butcher.
thighs
I can't remember seeing wings..so people eat wings?
and whole chickens.

you want buy breasts on the bone which I really like.

the whole chickens come in 3 types ( and there may be more)

white
yellow
black

I was told that the colors denote what they eat, and I believed it until I saw the black one.
So I have cooked the white and the yellow. The prices look about the same.

They are not sold with giblets inside. They all seem small to me. I want that white meat and there never seems to be much.

Last weekend, I bought a black whole chicken.  The color looked the same as the other...maybe a little darker. I didn't realize until I went to clean and cook the chicken what was black. I could see black on the legs...on the skin. ooohhh I was not happy about this. I don't know why this was such a turn off to me but it really put me off the chicken. I couldn't really eat it.
I admit to being a little picky...no more black chicken for me.

I need to question my love of calves liver too. On the package, when you buy it, it says..."no older than 8 months old". I don't eat veal...but I am eating calves liver.

The beef is not good.
entrcote, rum steak, pave....I don't know any of these cuts...I can't find anything that is very good and there is a lot of choice. We did find a great restaurant that had excellent steaks...where are they getting them from?

what's left? Pork Chops are good...just like in the States.
Ham....I don't know.
There is a lot of lamb..chops and no real legs of that we get in the states.

There is a ton of different kinds of organ meat. I'm not going there.
rabbit, no way, other birds, horse meat never,
turkey , yes, but only boneless breasts that looks like chicken in shape and size. There is a Muslim butcher that you can get a turkey breast by ordering it, but I am repelled from going there. It's behind a big gate and I imagine all kinds of dead animals there...so I'm not going.

Bacon...you can't get what we think of as bacon. They have "lardon" which is their version. It is small chopped pieces of grisly bacon fat. yick. It is a bit disturbing on a salad.

there is a massive aisle of packaged meats, like sliced chicken, ham, turkey

so this is where I am with meat. There are so many great butchers. At the little supermarket near my house, they have 3 butchers on at all times. You get in line to get your meat. There must be better steaks.

Fish and shellfish...there is a lot...we are on the sea.
