Well, I never found a turkey. The butcher in Opio let me down. I went there on Wednesday ( Opio is about 20 minutes out of the way, up in the hills.) and he said...no, we could not get one. He tried the abattoir but no, no dinde.
I was close to canceling the whole thing. I drove dwon to some butchers closer to home. I did learn that a Poule is a hen. I was not comfortable with a hen. They told me that a hen is feminine. So, a chicken is masculine? Was this a fact that I never knew, or thought about? However, now I know.
So I ended up at the Muslim butcher. This was the original place I was told wo uld have turkey...or I could order one but it was closed when I went on Monday.
You drive into this place. It's only about 2 miles from my house.
They have an abattoir on site. You can see chickens in cages through that door, straight ahead. You can hear every type of animal noise you can imagine.
I waled in to the very narrow store front on the right in this pic. I spoke to the butcher who was very nice, but had only one eye. No dinde here on that day ...but he went to the back and found me a big chicken. He was gone about 5 minutes. I started worrying that he was killing one out back. I asked the butcher, # 2, if the bird was already dead...he laughed and said yes. The butcher finially came with a big chicken with his long neck and head attached, but plucked.
He asked me if I wanted it cleaned out inside...OH YES...and please, the head and the neck need to go too. They thought it was funny that I was so squeamish. It's nothing to them.
He cleaned it up nice for me and told me to cook it for o ne hour 30 minutes only.
and I was off.
